Chef Candace Hartley, who ran the Empress Dining Room at the world
famous Empress Hotel prior to her arrival at Dunsmuir Lodge conference
centre in 1997, is regarded as one of the top chefs in Canada today.
Candace has developed and nurtured ties to over 40 local growers
and ranchers who provide Dunsmuir Lodge with a constant supply of
some of British Columbia's finest and most specialised and organically
grown products. Special emphasis is also given to the abundance
of fresh seafood provided by the surrounding waters. Our cuisine
is a modern classic style that combines these products into artful
presentations that will excite both the eye and the palate.

and there is also a weekly Sunday brunch that consists of a combination
of special breakfast and lunch items,
with an added assortment of seafood and freshly baked delights.

there is a lighter menu served daily in the Peninsula Lounge, with
its large, open air patios for summertime enjoyment and the warmth
of fireside dining in the winter months.
