Excellent menu, beautifully presented cuisineExecutive Chef Candace Hartley, who ran the Empress Dining Room at the world famous Empress Hotel prior to her arrival at Dunsmuir Lodge conference centre in 1997, is regarded as one of the top chefs in Canada today.

Candace has developed and nurtured ties to over 40 local growers and ranchers who provide Dunsmuir Lodge with a constant supply of some of British Columbia's finest and most specialised and organically grown products. Special emphasis is also given to the abundance of fresh seafood provided by the surrounding waters.
